And together we learned how to make Dahi Gula and how to make it at home. Today we learned how to make both these dishes.
How to make Dahi Gula
Curd - 1 cup
Sugar (1/4 cup)
Cumin powder (1 teaspoon)
Black salt (1/2 teaspoon)
Chaat Masala (½)
teaspoon, white salt (1/4 teaspoon)
Baking soda (1/4 teaspoon)
Cumin (1 teaspoon)
White salt (1/2 teaspoon)
Gram flour (1 cup)
A little coriander
Fennel (1/2 teaspoon)
Rye (1 tablespoon)
Cumin (1/2 teaspoon)
Red chili powder (1/4 teaspoon)
Chopped tomatoes - 1
Chopped onion - 1
Method of making
Put curd in a big bowl, grease it well and make a cream out of it. Now add one and half (1/2) cup of water and make a thick curd. Now add sugar (1/4 cup), roasted cumin powder (1 tsp), black salt (1/2 tsp), chaat masala (1/2 tsp), white salt (1/4 tsp) and little to buttermilk. Add some green coriander and mix well.
Now to make gula, prepare a thick batter by adding gram flour (1 cup), white salt (1/2 tsp), cumin seeds (1 tsp) and little water in a big bowl. After preparing the batter, add some baking soda (1/4 teaspoon) and mix well.
Now put a kadai on gas and heat oil in it. As the oil heats up, make small bhajis out of the gram flour batter. Now add the prepared fritters to curd, mix well and keep for 5 minutes.
Now for the tadka, add two spoons of oil in a tadka pan, add fennel (1/2 spoon), rai (1 spoon), cumin seeds (1/2 spoon) and fry it.
Now in a bowl with curd fritters add sun and mix it well and add red chilli powder (1/4 tsp), tomato, chopped onion on top. Dahi gula is ready, now you can serve it.

Mumbai Style Dahi Vada
Stuff for the head
2 cups of urad dal
3-4 green chillies
1-1.5 inches of ginger
Pashi
Oil
1-1.5 cups of curd
Sugar
Salt
Ingredients for serving
Date Tamarind Chutney
Red chili powder
Chaat masala
Coriander leaves

First, soak the urad dal for 2-3 hours.
Now put the soaked dal, green chillies, ginger and salt in the mixer. Prepare a smooth batter by grinding all the ingredients.
Whisk the batter well so that it becomes fluffy. Add water if required and prepare the batter.
Now heat the oil to fry the vada, put the vada in the batter and deep fry it. (Make the vada the same way you put the bhajiya in the kadai).
After the vadas are fried, soak these vadas in cold water for 5 minutes.
Now add salt and sugar to curd. Stir well. A little bit of curd
Make thick.
Drain the soaked head and place on a plate.
Now pour the prepared curd over it.
Sprinkle date-tamarind chutney, red chilli powder and chaat masala over it.

Garnish with some coriander and the Mumbai Chaat Recipe Dahi Vada is ready to eat.
