Pakora material
Magna dal - 2 cups
Coriander seeds - 2 tbsp
Fennel seeds - 2 tbsp
Black pepper - 1 tsp
Cumin - 1 tbsp
Grated ginger - 1 tbsp
Chopped green chillies – 3 to 4
Asafoetida - 2 pinches
Salt to taste
Coarsely cracked red chillies – 1 tbsp

Rice flour - 2 to 3 tbsp

For the green sauce

moong dal pakoras & with green chutney
To make mung bean pakoras, take 2 cups of mung beans, wash them well and soak them for 2 hours. After two hours, drain the water and put the soaked dal in a mixer jar (separate 2 tbsp of soaked dal in a bowl). Grind the dal to a coarse paste and take it out in a bowl.
Put a pan on gas, add 2 tbsp of coriander, 2 tbsp of fennel seeds, 1 tbsp of black pepper, 1 tbsp of cumin seeds and roast for a few seconds. Now turn off the gas, and let the masala cool. After the masala cools down, put it in a food processor and grind it to a coarse powder.
Now check the batter and whisk it well for two minutes. After 2 minutes add 1 tsp grated ginger, 3-4 chopped green chillies, 2 pinches of asafoetida, salt to taste, 1 tsp cracked red chillies. Add coarsely ground spices, 1 tsp amchoor powder, 1/2 tsp red chilli powder, some dal separated, 2-3 tsp rice flour, chopped coriander, one chopped onion, one grated potato to the khandani and mix everything well.
Put the kadai on gas, add oil for frying and heat it well. After the oil is heated, drop the pakoras one by one into the hot oil. On medium flame, fry the pakoras stirring constantly until they turn golden and crispy. Once the pakoras are golden and crunchy, remove them to a plate.
Green Chutney Recipes
Take a mixer jar, add a handful of coriander seeds, 2-3 green chillies, 1 inch ginger, 1/2 tsp black salt, 1/2 tsp cumin seeds and two pinches of hing. Add 1/2 tsp chaat masala, 1 tsp curd, little water and grind well. Now your green chutney is also ready, and you can enjoy it with mung dal pakoras.
