material 



 More than half a cup of oil

 2 large onions chopped

 A teaspoon of cumin

 2 tablespoons of whole coriander

 A bowl of cashews

 3-4 tomatoes 

 2-3 green chillies

 Coriander with stalks

 2 tbsp garlic-ginger paste

 1 teaspoon coriander powder

 1 teaspoon red chili

 A teaspoon of turmeric

 garam masala

 5-7 Kāḷā marī

 Two bay leaves

 Half an inch of cinnamon

 5-7 cloves

 A large cardamom

 3 small cardamoms

 To make the gravy, put a pan on gas, add a little more than half a cup of oil and let it heat.


 Now add cumin and whole coriander and let it crackle.


Khaman dhokala 


 When the cumin seeds start to splutter, add the onion and cook on high flame until golden.


  Once the onion turns golden, fry the cashews until golden.


 Now add tomatoes, green chillies, coriander with stems and cook well.


 Once the tomatoes melt, turn off the gas and put them in a mixer jar.




 Add garlic-ginger paste, coriander powder, garam masala, turmeric and red chilli powder to the mixer and grind it well.


 Now heat 4-5 tbsp oil in a pan.


 Add black pepper, cloves, bay leaf, small cardamom, cinnamon and big cardamom in oil and saute well.


 Now add tomato-onion paste and cook it properly.


 When the gravy starts to release from to the pan, close the clams and store in a bowl or airtight container.


 The gravy is to be cooked till the oil rises.


 With this gravy you can make instant peas paneer, mushrooms and many different vegetables including chickpeas.
