A perfect way to make curd puri with tamarind chutney and green chutney
For Dahi Puri Chaat
Thick curd - 1 cup
Salt to taste
Sugar - 1/2 tsp
Boiled and mashed potatoes -2

For the tamarind sauce
Oil - 1 tbsp

Jaggery - 50 grams
Sugar - 2 tbsp
Coriander powder - 1/2 tsp
Red chilli powder – 1 tsp
Garam masala - 1/2 tsp
Black pepper powder - 1/2 tsp
Salt to taste
Black salt - 1/2 tsp
For the green sauce
Coriander leaves
Mint Green Chili – 2
Ginger-1 ich
Roasted gram dal - 2 tbsp
Salt to taste
Asafoetida - 2 pinches
Cumin - 1/2 tsp
Black salt - 1/2 tsp
Dry mango powder - 1 tbsp
Lemon juice - 1 tbsp
Water - 2 tbsp
Curd recipe
To prepare whole curd for Dahi Puri Chaat, take 1 cup of curd. Now add 1/2 tsp sugar, whisk well, your curd is ready.
Tamarind Chutney Recipe
To make tamarind chutney, soak 500 grams of seedless tamarind in hot water for 15 minutes. Now take a mixer jar and add soaked tamarind in it and make a fine paste. Now take out the tamarind paste in a sieve and strain it in a bowl. Now add 4 tbsp of water and mix well. Now put a pan on gas, add 1 tbsp of oil and heat it well. After heating the oil, add 1/2 teaspoon of cumin seeds, two pinches of asafoetida, tamarind paste and mix it on low flame. Now in it 50 grams
Add ground or chopped jaggery, 2 tbsp sugar and mix well and dissolve. Now add 1 teaspoon red chili powder, 1/2 teaspoon ghana powder, 1/2 teaspoon garam masala, 1/2 teaspoon black pepper powder, salt to taste, 1/2 teaspoon black salt. Now mix all the ingredients well and cook till thick. Once the tamarind chutney thickens, switch off the gas, your tamarind chutney is ready.
Green Chutney Recipe
To make the perfect green chutney, take a mixer jar and add two handfuls of green coriander. Now add 1/4 cup fresh mint, 2 green chillies, 1 inch ginger, 2 tbsp roasted gram dal, 2 pinches of asafoetida, salt to taste, 1/4 tsp cumin seeds, 1/2 tsp black salt, 1 tsp dry mango powder, 1 Add a teaspoon of lemon juice, 2 tablespoons of water. Now grind all the ingredients well and make a fine paste. Now your perfect green chutney is ready.
Potato stuffing
To make dahi puri chaat, if potato stuffing is desired, mash boiled potatoes in a bowl and add half a bowl of boiled mugwort, 1 teaspoon of red chili powder and some chopped coriander. Now the filling for your Dahi Puri Chaat is ready.

Now take panipuri puri and poke holes in it. Now fill all the puris with the prepared potato masala. After this add the soaked raita with bundi, finely chopped onion and finely chopped tomato.
