How to make Achari Paneer

  •  For how many people: 2
  • 200 g paneer / cut into 1/2 inch pieces
  •  1/8 tsp fenugreek seeds
  •   1/4 tsp rye
  •   1/4 tsp Kalonji
  •   1 tsp cumin seeds
  •  4-5 cashews, optional
  •   1 tsp ground ginger-chili • 1 tsp coriander powder
  •   1/4 tsp turmeric
  •   1/2 tsp red chilli powder
  •   3/4 cup of whipped curd
  •   1/4 tsp Kasuri Methi, optional
  •   2 tablespoons of oil
  •   Salt, to taste
  •   1 tablespoon finely chopped coriander
  •   1/2 tsp fennel
  •  A pinch of hing
  •  1 large tomato, diced 

Take all the spices (fenugreek, rai, fennel, kalonji and cumin) in a plate.  Do not add too much fenugreek as using too much will make the vegetable bitter.


 Put all the spices shown above in a pan/pan and roast them on medium flame for 1 minute or until fragrant.


 Allow the roasted masala to cool for a while.  Once cool, put them in a small jar of a mixer and grind them until they are medium coarse.  In the same jar of the mixer, put the tomato slices and cashew nuts.  Grind it till smooth puree.


 Heat oil in a pan/pan over medium heat.  Add asafoetida and ginger-chilli paste and saute for about 30 seconds.  Add tomato puree to it.


 Fry it until oil separates.  Add coriander powder, turmeric and red chilli powder.


 Mix it well and cook for a minute.  (made in step-3) of masala in it


 Add cilantro powder.  Mix it well and cook for a minute.  Reduce the flame and add the curd.  Cook it for a minute while stirring with a spoon.  Add paneer pieces, kasoori methi and salt.


 Mix well and cook for 2-3 minutes.  Turn off the gas.  Add chopped coriander and mix well.  Achari Paneer is ready to serve.  Serve it hot with roti or paratha.

  •  Maida flour - 2 cups
  •  Wheat flour - 1/2 cup
  •  Salt-1 tsp
  •  water
  •  Oil - 1 tbsp
  •  To make Street Style Veg Frankie Rolls, take a bowl and add 2 cups maida flour, 1/2 cup wheat flour and salt to taste and mix everything well.
  •  Add water little by little and make a soft dough.
  •  Add 1 tbsp of oil over the dough and knead again and keep for 10 minutes to set.
  •  After 4-10 minutes, check the flour and knead it well.
  •  Take a small portion of the dough and make a round Gullu out of it.
  •  Take Gullu and prepare a medium thick roti with the help of Velan.
  •  Prepare roti from the rest of the dough like this.

 

Ingredients for Chili paneer Rolls


  •  Oil - 1 tbsp
  •  Garlic - 1 tbsp
  •  Chopped onion - 2 tbsp
  •  Salt to taste
  •  Red chilli sauce - 1 tbsp
  •  Tomato ketchup - 1 tbsp
  •  Soya sauce - 1/2 tsp
  •  Chopped green onions
  •  100 grams of paneer 
  •  Chopped green chillies – 2
  •  Kashmiri Red Chilli Powder – 1 tsp
  •  Chopped green, red, yellow capsicum
  •  Ginger - 1 tbsp

To cook wala panar raan, put a pan on gas, add 1 tsp oil and heat it well.


 Add 1 tsp grated ginger, 1 tsp minced garlic, 2 chopped green chillies and fry lightly.


 After a while add 2 tbsp of finely chopped onion, chopped green, red and yellow capsicum and fry well.


 After a while add 100 gm paneer pieces and mix well.


 After 1 minute, add 1 tsp red chili powder, salt to taste, 1 tsp red chili sauce, 1 tsp tomato ketchup and 1/2 tsp soy sauce and mix well.


 Add chopped green onion leaves, mix well and switch off the gas.


 Put the pan on gas, put the prepared roti on the pan and it well


 Roast it.  After some time, apply ghee/butter on it and fry it well from both sides


 Roast the way.


 Once the roti turns golden, take it out on a plate. A treasure of the dish


 Spread eggless mayonnaise and tomato ketchup on the roti.


 Add the prepared stuffing, chopped onions and spring green onion leaves.  Roll your chili paneer wedge roll and wrap it with butter paper.
