Rajasthani Mirchi Vada (Stuffed green chillies)

Hello everyone ! Today’s recipe is ‘Rajasthani Mirchi Vada’. Mirchi bada is a chili cutlet in which green chillies are stuffed with potato masala and then coated with gramflour batter, coated green chillies are then deep fried. In Rajasthan you will find this snack in every food joint. Mirchi vadas are served with ketchup or green chutney.

Ingredients for Rajasthani Mirchi Vada

Green chllies 12-13
For masala
Potatoes (boiled)5 (medium size)
Salt 1/2 tsp (or as per taste taste)
Dry mango powder/Amchoor1/2 tsp
Red chilli powder1/2 tsp (or as per taste)
Turmeric powder1/4 tsp
Green chilli/Hari mirch1-2 no.
Cumin seeds/jeera1/2 tsp
Mustard seeds/Rai1/2 tsp
Oil2 tbsp
Ginger (finely chopped)1/2 tsp
Coriander leaves (chopped)2 tbsp
For batter
Gramflour/Besan2 cups
Salt1/2 tsp (or as per taste)
Red chilli powder1/2 tsp (adjust according to your taste)
Carrom seeds/ajwain1/2 tsp
Baking soda1/8 tsp
Oilfor deep frying

Procedure for Rajasthani Mirchi Vada

  • Wash and wipe all the green chillies with a dry cloth.
  • Slit the chillies lengthwise on one side. Keep them aside.

  • Mash boiled potatoes.

  • In a pan heat oil, add cumin seeds and mustard seeds, let them crackle.

  • Add chopped green chillies. Let it cook for few seconds.

  • Add mashed potatoes in the pan.

  • In the pan add red chill powder, turmeric, chopped ginger, amchoor powder and salt.

  • Mix everything properly.

  • In the potato mix add chopped coriander. Mix everything. Keep it aside.

  • Prepare gramflour batter for coating. In a bowl take gramflour, red chilli powder, salt, carrom seeds, and baking soda.

  • Add water and make a batter of coating consistency, you do not want pouring consistency batter.

  • Stuff all green chillies with potato masala.

  •  Coat mirchi well with the batter.

  • In a kadhai heat oil. Deep fry mirchi vada on medium flame.

  • Repeat the above two steps for all the chillies. Keep mirchi vadas on the tissue paper to remove excess oil.

  • Serve mirchi vadas with ketchup.

Paneer Macaroni Pakodi (Cottage cheese pasta pakori)

Hi everyone ! Today’s recipe is ‘Paneer Macaroni Pakodi’.  It is a perfect recipe for tea time snack during monsoon or winter season. All you need is gram flour, boiled macaroni, paneer cubes, potato cubes and onion. Pakodi is a famous snack in Indian subcontinent, it is basically deep-fried fritters. Pakodis are usually serve as snack or starters.

Ingredients for paneer macaroni pakodi

Gram flour/ besan250 gms
Boiled macaroni1/2 cup
Paneer (cube)100 gms
Potato (cubed)2 (small size)
Green chilli3
Chopped coriander leaves2 tbsp
Dry mint leaves1 tsp
Salt as per taste
Red chilli powder1 tsp or as per taste (heaped)
Garam masala1/4 tsp
Soda1/8 tsp
Cumin seeds / jeera1/2 tsp
Onion (cubes)2 (small size)
Oil for deep fry
Wateras required for batter

Procedure for paneer macaroni pakodi

  • Chop onion, green chillies, cut potato cubes, cut paneer in cubes. Boil half cup macaroni.

  • In a bowl take 250 gms besan, add macaroni, paneer, chopped vegetables, salt and soda.

  • Add salt, red chilli powder, cumin seeds and garam masala.

  • Add sufficient water, mix everything in a smooth texture.

  • Heat oil in a kadhai. Make pakoras.

  • Transfer pakodi on tissue paper. Serve hot with ketchup/green chutney.

 Note:

  • You can also add sauted mushrooms in the pakodis.
  • For some add-on flavour, add kasoori methi or chaat masala in the batter.
  • While serving you can also sprinkle chaat masala on the pakodis.

Ingredients for Chicken Sweet Corn Soup

Chicken Stock                                              6 cups

Chicken breast (cut in small                1 cup

pieces)

Sweet Corn kernel                                    1 cup

Egg                                                                      2

Dark Soy Sauce                                           2 tbsp

Corn flour                                                       2 ½ tbsp

Chicken flakes (optional)                       1 tsp

Ginger chopped                                          ½ tsp

Preparation for Chicken Sweet Corn Soup

  • In a deep saucepan boil chicken stock.

  • Add chicken pieces in the stock, let it cook for 5 mins.

  • In the meantime, in the mixer mash corn kernels slightly.

  • Add mashed corn kernels and chopped ginger in the pan, let it cook for 15 mins more.

  • At this point add soy sauce and chilli flakes in the soup. (Taste soup to check requirement of salt, if require add either salt or soy sauce.)

  • Beat egg in a small bowl, slowly pour egg in the pan. Do not stir soup at this point, allow egg to cook for 2-3 mins. Start stirring soup when white ribbons starts swirling in the soup.

  • In a small bowl mix properly cornflour and 4 tbsp water. Add this mix in the soup, allow soup to thickens.
  • Garnish soup with chopped coriander and serve immediately.
Chicken Sweet Corn Soup

Note:
  • Chicken stock recipe: In a pan boil water with chicken pieces, chicken bones, black peppercorn, bay leaves, onion, cloves, chicken cube(optional), and some optional vegetables (carrots and celery). Cook this mix on low flame and let it boil for at least 30 mins. Keep on skimming stock regularly. Pass stock through sieve, store stock in refrigerate for soup and other recipes. This is how I prepare my chicken stock.
  • Chicken stock cubes are also available in market, you can also use it.
  • For garnishing you can also use green part of spring onion.
  • Chilli flakes are optional, you can skip.

Pani Puri (Gol Gappa or Puchkas, homemade pani)

Hi everyone ! Today’s recipe is ‘Pani Puri’. It is a very famous Indian street food, which needs no introduction. There are various names for this street food in India itself, some very common ones are – Pani puri, gol gappa, pani patashe, puchkas and gup chup. I love it and can have n number of puri, but I prefer homemade pani and therefore, my mom prepares pani at home. This again is my mother’s recipe. It is quick and easy one to prepare at home. You can store and refrigerate pani and have it on next day also. Ready-made puri is easily available in market these days.
