Mixed Sprout Salad (Healthy recipe)

Hello my foodie friends ! Today’s recipe is ‘Mixed Sprout Salad’. This recipe is a very healthy dish which is full of proteins and other nutrients. You can have this salad as snack or in your breakfast.  For this recipe I have used only two variety of sprouts, but you can add your favourite sprouts. For this simple and healthy salad all you need is boiled/steamed sprouts, few veggies of your choice and few spices.

Ingredients for Mixed Sprout Salad

Mixed sprouts (boiled/steamed)2 cups
Boiled potato (cubed)1 medium size
Cucumber (chopped)1 medium size
Onion (chopped)1
Tomato (chopped)2
Lemon juice2 tsp
Saltas per taste
Green chilli (chopped)1 medium
Red chilli powder1 tsp as per taste
Chaat masala1/2 tsp
Coriander (chopped)2 tsp

Procedure for Mixed Sprout Salad

  •  Boil/steam sprouts.

  • Drain the liquid. Keep sprouts aside.
  • Chop cucumber, boiled potato, tomato, green chillies and onion.

  • Take a bowl add boiled sprouts, veggies, salt, lemon juice, chopped coriander, chaat masala, and red chilli powder.

  • Toss everything well.

  • Mixed sprout salad is ready to serve !

Note: How to sprout mixed beans at home?

  • Wash beans of your choice thoroughly, for this recipe I have chosen moong and black gram. Keep in mind moong starts germinating early.
  • Soak your beans overnight. Soak both the beans separately.
  • Next day, drain water and keep your beans in a container covered with a wet cloth.
  • Keep the container aside, and check next day.
  • If you are satisfied with length of your sprouts use them, otherwise cover with wet cloth again and check again next day.
  • This is how I sprout my beans.

Russian Salad (how to make veg russian salad)

Today’s recipe is ‘Russian Salad’.  This is salad recipe is a quick 15 mins recipe. You can have russian salad any time of the day as a small meal or with any of your meal. You can also give this salad to your kids, if you find it very difficult to include veggies in your kid’s diet.

This recipe of russian salad is an eggless version, if you are an eggetarian or non vegetarian you can add boiled eggs in this recipe. Even mayonnaise used in this recipe is eggless mayonnaise.

Russian Salad- Video format

Serves: 3

Duration: 10 mins (prep time) + 5 mins (cook time) = 15 mins (total time)

Ingredients for Russian Salad

Cream1 small tetra pack
Mayonnaise
4 tbsp
Carrots (shredded)1 small size
Potato (boiled, cube)1 medium size
Apple 1 small size
Cucumber1 medium size
Green Capsicum/bell pepper 1 medium size
Salt1/4 tsp or as per taste
Sugar (optional)1/4 tsp
Black pepper (crushed)1/4 tsp

Procedure for Russian Salad

  • Boil potatoes. Chop the potato in small cubes.
  • Wash all the vegetables and apple. Cut apple, cucumber, and capsicum in cubes of equal size. Shred carrots.

  • Take a big mixing bowl, add cream, vegetables and apple in it.

  • Add eggless mayonnaise in the bowl.

  • Mix everything well.

  • Add sugar, salt and crushed black pepper in the bowl.

  • Mix well. You can either serve immediately or refrigerate and serve later.
  • Veg russian salad is ready, garnish with shredded carrots and serve !

Note:

  • Other veggies that you can use for this salad are boiled sweet corn, boiled peas, pineapple and beans.
  • Add boiled eggs in this salad recipe, if you take eggs in your diet.
  • Skip sugar, it is optional, if any health issue.

Hi everyone ! Today’s recipe is my childhood favourite ‘Koshimbir with Yogurt’. This curd salad was first introduced to me by my aunt (my mother’s friend), she is from Maharashtra and cooks delicious authentic Maharashtrian food. You can have koshimbir with any of your three meals. I love to eat it with parathas and sometimes like a small meal. It is a less than 10 mins recipe. Pasta Salad (Creamy cold salad)

Hello everyone ! Today’s recipe is ‘Pasta Salad’. This is one of my favourite salad recipe. I love the combination of all flavours that this dish offer – salty, tangy and sweet. Pasta salads are usually served chilled in vinegar, oil or mayonnaise based dressing. This salad is in mayonnaise dressing with boiled elbow macaroni. You can have this dish as main course or appetizer or side dish.

Ingredients for Pasta salad

Macaroni (boiled)                                              2 cups

Sweet Corn                                                           1/2 cup

Capsicum (chopped in small cubes)        2 large

Chicken (boiled chunks/cubed)                1/2 cup

Dressing :

Cream                                                                       1/2 cup

Mayonnaise                                                          1 cup

Sugar                                                                        2 tsp

Ketchup                                                                  3 tbsp

Chilli Sauce                                                           2 tbsp

Tomato puree (optional)                               2 tbsp

Salt                                                                             1/2 tsp or as per taste

Chilli flakes                                                            1/2 tsp

Procedure for Pasta salad

  • In a bowl mix all the ingredients of dressing.

  • Add macaroni in the bowl and let the dressing coat it uniformly.

  • Add vegetables and chicken chunks (optional) in the bowl, now for the last time mix everything.

  • Refrigerate it for half an hour, pasta salad is ready to serve after half an hour.

Note:

  • You can use more than one variety of pasta for this recipe.
  • Other vegetables that can be used in this recipe are olives, broccoli, carrots, cucumber, and onion.

Ingredients for Creamy Fruit Salad

Mango (chopped)         1

Pomegranate                  1

Banana                               3

Sweet lime                        1

Full cream (small           1

size tetra pack)

Sugar (optional)             2-3 tbsp (as per your taste)

Procedure for Creamy Fruit Salad

  • Wash, peel and chop mango and sweet lime in small pieces.
  • Wash and remove pomegranate seeds and mix it with other fruits.

  • Take a deep bowl, add cream and sugar.

  • When sugar completely dissolve, add fruits in bowl.  At this time cut bananas and add to the bowl.
Add freshly cut banana.

Note:
  • This salad can be made with mix of any fruits of your choice like apple, grapes, pineapple, berries or kiwis.
  • For crunch you can add dry fruit in this salad.
  • In case you want to skip sugar you can add your favourite sugar form.
  • You can prepare this salad with coconut cream also.
