French Toast (Spanish toast / Eggy bread)

Hey friends ! Today’s recipe is ‘French Toast’. In this recipe breads are soaked or dipped in the mixture of beaten egg, milk and few optional spices. Egg coated bread slices are then shallow fried on both the sides until they are golden brown and cooked. This dish can be eaten as a breakfast, dessert or tea-time snack. It is a very easy and quick dish to prepare for your kid’s tiffin.

Ingredients for French Toast

Bread slices9
Eggs3
Vanilla essence2-3 drops
Salta pinch or as per taste
Sugar (optional)1/2 tsp or as per taste
Cinnamon powder (optional)1/4 tsp
Milk1/2 cup
Oil for shallow frying

Procedure for French Toast

  • I am taking small size white bread, you can choose any variety of bread slices.

  • In a bowl beat egg, milk, salt, sugar, cinnamon powder and vanilla essence together.

  • Heat butter or oil in a  non stick pan.
  • Dip bread in the egg -milk-spice mixture, soak both the sides carefully.
  • Place in the non stick pan and cook from both the sides well.

  • Your french toasts are ready, Serve hot.

Note:

  • Serve french toast with ketchup or fruits or cream.
  • For garnishing you can sprinkle powdered sugar.

Dhaba Style Paneer Bhurji (scrambled cottage cheese)

Hello everyone ! Today’s recipe is ‘Dhaba Style Paneer Bhurji’. In this recipe paneer or cottage cheese is scrambled/crumbled/grated and cooked with veggies and spices. Serve this dish with hot chapati/paratha. It is a quick recipe, in which you saute onion and tomato along with few spices, lastly add grated paneer. You can also pack paneer bhurji in your kid’s lunch box.  This is very commonly available dhaba dish, that is served at every north Indian dhaba (roadside food stall on highways). Bhurji is hindi word for scrambled.

Ingredients for Dhaba Style Paneer Bhurji

Paneer/Cottage cheese200 gms
Onion (finely chopped)5 small size
Tomato (finely chopped)2 medium size
Green chillies (chopped)2
Garam masala/All spice powder1/4 tsp
Red chilli powder1/2 tsp or as per taste
Cumin seeds /Jeera1/2 tsp
Ginger garlic paste1 tsp
Coriander (chopped)2 tbsp
Kasoori methi (crushed)1/2 tsp
Oil1.5 tbsp
Turmeric powder1/4 tsp
Salt as er taste

Procedure for Dhaba Style Paneer Bhurji

  • Grate paneer/cottage cheese and keep it aside.

  • In a non-stick pan heat oil, add cumin seeds/jeera and let them crackle.

  • Add onion and cook until they turn translucent or 5 mins on a medium flame.

  • When onion turn translucent, add ginger garlic paste. Cook till raw smell fades away.

  • Add green chillies and saute for few minutes.

  • Now add chopped tomato, cook till they become soft.

  • When tomatoes are almost done, add all the dry spices.  Mix everything well.

  • Next step is to add grated paneer. Mix nicely.

  • Final step is to add chopped coriander and crushed kasoori methi (dried fenugreek leaves). Mix well.

Peanut Ladoo (two ingredients recipe)

Hello everyone ! Today’s recipe is ‘Peanut Ladoo’. This recipe needs only two ingredients. It is one of the easiest and healthiest dessert recipe.  You can store ladoos for one week at room temperature in an air tight container. If you love roasted peanut and have sweet tooth too, this dessert is perfect for you.

Peanuts are good sources of vitamin E, niacin, folate, protein and manganese. Peanuts are rich in energy and antioxidants. Just a handful of peanuts per day provides enough nutrients. But do not exceed beyond this limit. Remember excess of anything is not good ! 😀

Ingredients for Peanut Ladoo

Raw peanut/Moongphali/Goundnut                                             1 cup

Jaggery / Gud                                                                                               1/3 cup or as per your taste

  • Heat a deep and thick bottomed  pan. Add the raw peanuts and keep flame on medium level.

  • Roast the raw peanuts well, keep stirring at regular intervals.

  • Roast till the peanuts are crunchy, raw peanuts are bitter in taste, so roast the peanuts perfectly. (You can taste the peanut and check whether its still bitter in taste or ready for next step)

  • Once done, let the roasted peanuts cool down.
  • Remove husk of peanuts by rubbing them in between your palms. This step will take sometime to complete.
  • Take a grinder jar, add the roasted peanuts and jaggery in it.

  • Grind both the ngredients together till you get coarse consistency.
  • Take out the mixture in a bowl or tray or plate.

  • Mix this mixture uniformly.
  • Take small quantity of peanut-jaggery mixture in hand and start preparing round shaped balls or ladoo.
  • Peanut ladoos are ready to serve !

Besan Cheela (Gram flour veggies pancake)

Hello everyone ! Today’s recipe is ‘Besan Cheela’. Besan cheela is basically gram flour pancakes, which can be prepared by adding spices and veggies of your choice in gram flour batter. You can have this dish in your breakfast or as a tea time snack. I love this dish for its simplicity. You can make it nutritious by adding grated cabbage, carrots or spinach. In my recipe I have added finely chopped onions, tomatoes, green capsicum and mint leaves.

Serve this recipe with tomato ketchup or chutney. If your kids give you hard time in when you serve them veggies, this recipe is what you need to add more veggies in their diet. This recipe is perfect for those who are on a diet.

Besan/ gram flour2 cups
Onion (medium) (finely chopped)1
Tomato (medium) (finely chopped)1
Green capsicum (medium) (finely chopped)1

Red chilli powder1 tsp
Turmeric1/4 tsp
Curd1 tbsp
Wateraequired for batter of pouring consistency

Carom seeds1/4 tsp

Ginger (grated)1/4 tsp
Mint leaves (finely chopped)7-8

  • Take a bowl, add gram flour, salt, cumin seeds, red chilli powder, turmeric powder, carom seeds.

  • In the dry ingredients, add all the veggies, grated ginger and curd.

  • In the above mix, add 1/2 cup water first. Then according to your need, add more water to get pouring consistency.

  • Heat a girdle or frying pan on a medium to low flame. Pour the batter onto the pan.

  •  Gently and carefully spread the batter.

  • On a low flame let the cheela cook, till top of the cheela starts to look cooked.
  • Drizzle oil over cheela and on edges. Cook from both the sides.

  • Your cheela is ready to be served !

Note:

  • Use veggies (grated or finely chopped) of your choice in cheela.
  • You can also have it with roti/chapati. When added in cur/yogurt, you will get another dish besan cheela raita.
  • Instead of mint leaves you can also use chopped coriander leaves.

Paneer Macaroni Pakodi (Cottage cheese pasta pakori)

Hi everyone ! Today’s recipe is ‘Paneer Macaroni Pakodi’.  It is a perfect recipe for tea time snack during monsoon or winter season. All you need is gram flour, boiled macaroni, paneer cubes, potato cubes and onion. Pakodi is a famous snack in Indian subcontinent, it is basically deep-fried fritters. Pakodis are usually serve as snack or starters.

Ingredients for paneer macaroni pakodi

Gram flour/ besan250 gms
Boiled macaroni1/2 cup
Paneer (cube)100 gms
Potato (cubed)2 (small size)
Green chilli3
Chopped coriander leaves2 tbsp
Dry mint leaves1 tsp
Salt as per taste
Red chilli powder1 tsp or as per taste (heaped)
Garam masala1/4 tsp
Soda1/8 tsp
Cumin seeds / jeera1/2 tsp
Onion (cubes)2 (small size)
Oil for deep fry
Wateras required for batter

Procedure for paneer macaroni pakodi

  • Chop onion, green chillies, cut potato cubes, cut paneer in cubes. Boil half cup macaroni.

  • In a bowl take 250 gms besan, add macaroni, paneer, chopped vegetables, salt and soda.

  • Add salt, red chilli powder, cumin seeds and garam masala.

  • Add sufficient water, mix everything in a smooth texture.

  • Heat oil in a kadhai. Make pakoras.

  • Transfer pakodi on tissue paper. Serve hot with ketchup/green chutney.

 Note:

  • You can also add sauted mushrooms in the pakodis.
  • For some add-on flavour, add kasoori methi or chaat masala in the batter.
  • While serving you can also sprinkle chaat masala on the pakodis.
