Method for Zarda / Meethe chawal recipe – 

  • Wash and soak sela rice for at least half an hour.

  • In a large vessel heat water, add kewra water, cardamom pods, and zarda color in it.

 

 

  • Next, add sela rice and boil rice till 3/4th cooked.

  • Strain rice and keep it aside.

  • In a pan, heat ghee.

  • Saute or stir-fry cloves and dry fruits mix of your choice. Keep it aside.

  • Add cooked rice in the pan.

  • Now, add a layer of sugar on top of the rice.

  • Cover and cook for 7-8 mins, let the sugar melt.
  • Remove lid and mix gently, let the sugar syrup mix well with the rice.
  • Add dry fruits and tutti frutti in the rice. Let it cook.

  • Lastly, add khoya in the zarda, mix well.

  • Cook till rice is cooked and absorbs all the sugar syrup well.
  • Garnish with dry fruits and serve hot.
