Uttapam – A thick dosa like crispy savoury pancake dish from South Indian cuisine. Serve hot with coconut or tomato chutney.

Method for Uttapam Recipe –

  • Wash and soak rice rava (use only 1/2 cup water for rice rava) and black gram skinned (dhuli urad dal) for at least 4-5 hours. (Please note, wash rice rava very carefully, as they are very fine, do not wash rigorously.)

  • Add fenugreek seeds, rice and lentil in a mixer. Grind it to a smooth batter.

  • Let the batter ferment for few hours. 
  • Take a small batches of batter for making uttapam. Add salt. Mix it. Keep it aside.

  • In the meantime, chop vegetables like onion, green chillies, capsicum and tomatoes finely. Keep vegetables aside. 

  • Add water in the uttapam batter if required. (You need a batter which is easy to spread.)

  • Heat non-stick tava or cast iron dosa tava. 
  • Pour half cup batter in the centre of your tava/pan. Spread the batter in a round shape with help of laddle/spoon to get a thick uttapam. 

  • Now on the top layer sprinkle chopped veggies. If you want to make it spicier, you can sprinkle red chilli powder on the uttapam. 

  • Sprinkle few drops of oil on the sides and top of uttapam. 
  • I usually cover uttapam and dosa to cook it quickly. So, cover it till the bottom turns golden brown in colour. 

  • Flip the uttapam, let it cook for few seconds to cook the top layer completely.

  • Repeat same steps for the rest of the uttapams.
  • Serve hot with coconut chutney or you can select chutney here !
