Method for Palak Anda Curry-

  • In a deep vessel boil eggs.

  • Wash spinach properly.

  • In a pressure cooker, boil spinach with one cup water. Cook till two whistles.

  • Let the pressure drop. Make a smooth puree of spinach with a hand blender.

  • In a mixer grinder, prepare a paste of garlic, green chillies, ginger and tomato. keep it aside.

  • In a wok/pan, heat oil.

  • Add whole spices. Fry for a few seconds.

  • Add chopped onions in the pan. Saute till golden brown.

  • Next, add above prepared paste in the pan. Cook till the raw smell of the mix fades away.

  • When the raw smell fades away, add spinach puree.

  • One by one add all the dry grounded spices also in the puree.

  • Cook till oil separates from the gravy.

  • Add all the boiled eggs in the gravy. Cook for a few minutes more, covered.

  • Serve hot!
