Palak Anda Curry | Spinach Egg Curry Recipe

Today’s recipe is ‘Palak Anda Curry’. An eggs spinach dish in which boiled eggs are served with smooth gravy of spinach. This main course dish goes well with chapati or naan or tandoori roti. It is easy to prepare and can be served as a main course dish for dinner and lunch spread. It is one of the best ways to add spinach to your kid’s diet.

For Palak Anda Curry recipe, you will require –

spinach bunch, boiled eggs, few whole and ground spices, onion, green chillies, garlic, ginger and tomato. To prepare this dish you need to first boil eggs and spinach separately. Then make a puree of boiled spinach, saute the spinach puree. Lastly, add boiled eggs in the perfectly cooked spinach gravy.

Method for Palak Anda Curry-

  • In a deep vessel boil eggs.

  • Wash spinach properly.

  • In a pressure cooker, boil spinach with one cup water. Cook till two whistles.

  • Let the pressure drop. Make a smooth puree of spinach with a hand blender.

  • In a mixer grinder, prepare a paste of garlic, green chillies, ginger and tomato. keep it aside.

  • In a wok/pan, heat oil.

  • Add whole spices. Fry for a few seconds.

  • Add chopped onions in the pan. Saute till golden brown.

  • Next, add above prepared paste in the pan. Cook till the raw smell of the mix fades away.

  • When the raw smell fades away, add spinach puree.

  • One by one add all the dry grounded spices also in the puree.

  • Cook till oil separates from the gravy.

  • Add all the boiled eggs in the gravy. Cook for a few minutes more, covered.

  • Serve hot!
