For Moong Dal Stuffed Karela recipe, you will require –

Karela/bitter gourd, moong dal, onion, green chillies, oil, and few spices. You first need to soak and par-boil moong dal to prepare the stuffing. By the time dal gets ready, peel karela, and apply salt on the bitter gourd. Next, step is to fry and stuff the karelas with moong dal masala. The last step is to cook stuffed karela and moon dal.

Stuffed Bitter Gourd | Bharwa Karela - It is a bitter gourd recipe in which bitter gourds are stuffed with spicy moong dal and then cooked with onions and spices.

Method for Moong Dal Stuffed Karela -

  • Wash and soak moong dal for half an hour.

  • Parboil the moong dal. Strain and keep it aside.

  • Peel the rough edges of karela. Make vertical cuts on the bitter gourds. 

  • Scrape the inner side of karela and remove pith and seeds with your fingers or spoon. Keep the seeds and pith aside.  (if you want you can skip using seeds)
  • Add seeds, red chilli powder, cumin seeds, salt and pith in the moong dal. 

  • Rub the outer skin of karela with salt. Keep it aside. (this step helps in reducing the bitter taste of karela.)
  • In a pan, heat oil. 

  • Start frying bitter gourds from all the sides till golden brown. 

  • Remove and let it cool. 

  • Next, start filling moong dal stuffing in the fried bitter gourds. 

  • To keep the stuffing inside the karela, you can either tie it with a thread from all the sides or can use a toothpick.  

  • Now, heat more oil in the pan. Saute chopped onion till translucent.

  • Add crushed ginger-garlic paste and chopped green chillies. Fry till the raw smell of ginger-garlic paste fades away.

  • Next, add all the dry spices. Cook for few minutes. 

  • Lastly, add stuffed karela and remaining moong dal stuffing in the pan. 

  • Cover and cook till karela and dal are perfectly cooked.

 

  • Moong Dal Stuffed Karela is ready!
