Today’s recipe is ‘Matar ki Kachori’. Matar ki Kachori is a crispy snack recipe which is stuff with green peas mixture. It can be served with imli chutney or ketchup. This kachori recipe is best to serve as an appetizer/tea-time snack.
There are many variants of kachori in India, the main difference is of stuffing. Every Indian state where kachori is popular has its own stuffing.
In Rajasthan, you will get moong dal and pyaz kachori as a best savory option. Another form of kachori, in which it is dipped in sugar syrup and serve as sweet dish is the famous mawa kachori from Jodhpur. Other famous kachori from Rajasthan are hing/asafoetida kachori of Kota and Kadhi kachori of Ajmer.
Urad dal or moong dal stuffed along with besan are two forms of kachori popular in Uttar Pradesh. Raj Kachori comes from Delhi.
For Matar Ki Kachori, you will require –
green peas, all-purpose flour, asafoetida, green chilies, ginger paste, and salt. You can use either fresh or frozen green peas for this recipe. Matar ki Kachori stuffed with peas is a delicacy in Bengal. You can use same method and ingredients to prepare dough for kachori for all of the kachoris mentioned above. Fry kachori till it turn golden and crispy.
