Method for Aam Shrikhand – 

  • Using a muslin cloth or sieve, strain all the water from the curd. It will take 4-5 hours. (Keep the curd in the fridge while this process is going on, to avoid curd to get sour.)

  • In the meanwhile prepare a mango puree by churning mango pieces, powdered sugar, and cardamom powder together. Keep it aside.

  • Also, side by side prepare saffron milk by mixing milk and a few strands of saffron. 

  • When hung curd is ready, take it in a mixing bowl. Whisk it for 1-2 mins till it turns creamy and smooth. 

  • Next, add mango puree and saffron milk in the hung curd. Mix well.

  • After that add chopped almonds and pistachios. Mix well.

  • Lastly, chill shrikhand for 30 mins to an hour. 

  • Garnish with saffron strands and chopped dry fruits, serve it!
