Today’s recipe is ‘Aam Shrikhand’. It is the second easiest recipe of Mango according to me after Aam ras. If you are looking for something sweet as well as tangy dessert recipe, this one is for you. It is a very popular dessert from the western states of India. Every age group of people loves Amrakhand.

Aam shrikhand recipe requires –
Fresh Mango, hung curd, cardamom powder, saffron, milk and dry fruit like almond and pistachio.
This recipe is very easy and takes very less time. Hung curd preparation takes a major part of the preparation time. After getting hung curd ready, it is mainly all about mixing and chilling the shrikhand before serving it. If you have greek yogurt, you can use that also.
Aam shrikhand/amrakhand or any flavor of shrikhand goes really well with poori. Just like aam ras – chawal, this combo of shrikhand – poori is loved by many. Best time to enjoy Amrakhand is summer season when you easily get fresh mangoes.
Tip – To give a nice delicious twist, you can chop some fresh seasonal fruits of your choice in the mango shrikhand just fruit cream or custard. Trust me it tastes amazing, I have tried it. Do give it try also.

- 2 medium size or 250 gms Mango (Any variety of mango)
- 1.5 cups Hung Curd (Curd prepared from 1/2 litre Milk)
- 2 Tbsps Castor sugar / powdered sugar or as per taste and sweetness of mango
- 1/2 tsp Elaichi / Cardamom powder
- 5-6 nos. Almond (Chopped)
- 5-6 nos. Pistachio (Chopped)
- 10-12 strands Saffron/Kesar
- 1/4 cup Milk
- 1 tsp Chopped almonds and pistachios mix, few saffron strands

Method for Aam Shrikhand -
- Using a muslin cloth or sieve, strain all the water from the curd. It will take 4-5 hours. (Keep the curd in the fridge while this process is going on, to avoid curd to get sour.)
- In the meanwhile prepare a mango puree by churning mango pieces, powdered sugar, and cardamom powder together. Keep it aside.
- Also, side by side prepare saffron milk by mixing milk and a few strands of saffron.
- When hung curd is ready, take it in a mixing bowl. Whisk it for 1-2 mins till it turns creamy and smooth.
- Next, add mango puree and saffron milk in the hung curd. Mix well.
- After that add chopped almonds and pistachios. Mix well.
- Lastly, chill shrikhand for 30 mins to an hour.
- Garnish with saffron strands and chopped dry fruits, serve it!
