Kebab Recipe (from leftover mutton and rice)

‘Kebab’ is everyone’s favorite non-veg snack or starter recipe. This kebab recipe is made from leftover mutton curry and rice. Never let your leftover get waste , you can always prepare some delicious and tempting recipe from leftover food. For this recipe I have used mutton curry and rice (leftovers). Enjoy this kebab recipe as snack with green chutney or ketchup.

Ingredients for Kebab (from leftover mutton curry and rice)

 

Mutton and rice (Leftover)300 gms (mutton curry) + 1 cup (rice)
Bengal gram split and skinned / Chana dal 1 cup
Onion (diced)1 (large)
Green chilli (chopped)2
Coriander leaves (chopped)2-3 tbsp
Red chilli powder1 tsp or as per taste
Salt1/2 tsp or as per taste
Ginger-garlic paste2 tsp
Water1 cup
Gheefor shallow frying

Method for Kebab (from leftover mutton curry and rice)

  • Wash and soak dal or lentil for 15 mins.

  • In a pressure cooker add ginger-garlic paste, salt, red chilli powder and leftover mutton and rice. Cook for three whistles.

  • Let the pressure drop and check whether lentil is tender or not. Let the mix cool down.

  • If your mutton is not boneless then remove bones from the mix carefully.

  • In a grinder, grind everything and prepare mutton mix for kebabs.

  • Add chopped onion, green chillies and coriander leaves in the mutton mix. Mix everything properly.

  •  Divide the above mixture in equal parts. Start preparing kebabs.

  • Heat ghee in non-stick pan. Shallow fry all the kebabs from both the sides.

  • Kababs are ready to be served. Serve with lemon wedges and chutney or ketchup.

कबाब बनाने की विधि  (बचे हुए मटन और चावल से ) –

  • चना दाल को धो के १५ min के लिए भिगो दें।

  • प्रेशर कुकर में मटन, चावल,लाल मिर्च पाउडर, नमक, और लहसुन-अदरक पेस्ट, एक कप पानी के साथ ३ whistles तक पकायें।

  • प्रेशर निकलने पे, ढक्कन खोल के देखें दाल पूरी तरह गली हे या नहीं।

  • मटन के मिक्स को ठंडा होने दें, अगर मटन में हड्डियाँ हे तो उन्हें अलग निकाल  दें।

  • ग्राइंडर में मटन के मिक्स को अच्छे से पीस लें।

  • एक बाउल में मटन मिक्स, प्याज़,हरी मिर्च और धनिया पत्तिया डाल  के अच्छे मिला ले।

  • कबाब के मिक्स को बराबर हिस्सों में बाँट दें।  कबाब बनायें।

  • एक नॉन-स्टिक पैन में घी गरम करें और सभी कबाब को दोनों तरफ से shallow फ्राई करें।

  • गरमा गरम कबाब निम्बू , हरी चटनी और केचप के साथ परोसें।
