Carrot Pickle Recipe (Gajar ka achar)

Carrot Pickle is tangy and quick pickle recipe. It is easy to prepare and  require very few ingredients. Winter is perfect time to prepare this pickle. For this recipe, you need red carrot variety, they are juicier than orange carrot. You can enjoy this pickle with plain and stuffed parathas or dal rice or with simple khichdi.

Use mustard oil for this pickle recipe. We have used ready to use pickle masala with some additional of spices, to adjust it according to my family’s taste. This recipe is my mother’s recipe. You need to keep this pickle under sunlight for continuously 5-6 days. We started eating this pickle from the very next day.

Ingredients for Carrot Pickle

Carrots / गाजर 250 gms
Pickle masala (readymade)1 cup
Mustard Oil / Sarson tel / सरसों का तेल (for frying)1/2 cup
Citric acid /Nimbu ka sat / निम्बू का सत /निम्बू का रस 1/2 tsp
Vinegar 1/2 cup
Mustard seeds/ Rai / राई 1 tsp
Lemon juice3 lemons
Mustard Oil /Sarson tel (for pickle)2 cups
