Bathua Raita (Chenopodium Yogurt dip)

Bathua Raita is  a very popular raita recipe of north India. Bathua is also known as Chenopodium. This recipe is simple and easy. In winter bathua is a very easily available green leafy vegetable. For this raita recipe, you need fresh yogurt, bathua, salt and temper raita with few spices. Enjoy this raita/dip with hot parathas.

Ingredients for Bathua Raita

Yogurt/ Curd /Dahi2 cups
Bathua/Chenopodium leaves1 cup
Green chilli / Hari mirch (large) (finely chopped)1
Salt1/2 tsp (or as per taste)
Black salt1/4 tsp
Cumin seeds1 tsp
Asafoetida / Hinga pinch
Oil2 tsp
Red chilli powder (lal mirch)1/4 tsp
Turmeric powder (haldi)1/8 tsp

Method for Bathua Raita

  • Wash bathua leaves properly. Boil water in a pan. Add leaves and cover the pan. Let the leaves boil for 4-5 minutes.

  • Let the leaves cool down. In a mixer prepare a smooth paste of bathua leaves.

  • In a bowl, whisk curd/yogurt.
  • Add bathua paste, salt and black salt in the curd. Mix well.

  • Prepare a temper for raita. Heat oil, add cumin seeds and hing.

  • Add green chillies, cook for 1 min, lastly add red chilli powder and turmeric. Mix everything nicely.

  • Temper the raita. Serve immediately.

बथुआ रायता बनाने की विधि –

  • बथुआ अच्छे से साफ़ कर लें।  साफ़ करने के बाद अच्छे से धो लें।

  • एक पैन में १ कप पानी गरम कर लें।  गरम पानी में  बथुआ मिला के उबलने के लिए रख दें। ढँक कर ४-५ min उबाले।

  • पत्तियों को ठंडा होने दें।  मिक्सर में महीन पीस लें।

  • एक बाउल में फेंटा हुआ दही लें।
  • बथुआ के पेस्ट को दही मिलाएँ , साथ में काला नमक और नमक भी दही में मिला लें। अच्छे से सब को मिला लें।

  • अब तड़के के लिए तेल गरम करें। तेल में ज़ीरा और हींग डालें।

  • तड़के में हरी मिर्च डाले और १ min पका लें। लाल मिर्च और हल्दी डाल के तुरंत आंच बंद कर दें। अच्छे से
    मिला लें।

  •  रायता पे तड़का लगाएं।  अच्छे से मिला के तुरंत परोसे।

  5. Your bathua raits is excellent. But I think that bathua raita is not as popular as other normal raita but people who use to enjoy bathua sabzi since childhood they just prefer bathua raitha than anything else. It’s flavor is so different.
