Mirchi Thecha (maharashtrian green chilli garlic chutney)

Hello Everyone ! Today’s recipe is¬†‘Mirchi Thecha’. It is a very popular authentic maharashtrian green chilli garlic chutney. Traditionally, thecha is served with bajra roti or jawar roti. In this recipe I have used green chillies, garlic and coriander as my main ingredients. Thecha can be prepared in many different ways, some people use peanuts, some only prepare it with chillies and garlic. Kolhapuri thecha is another version of thecha which is prepared by using dry red chillies.

This recipe is shared by my mother’s friend, aunty is from Kolhapur, so this recipe is an authentic one. For all those who love very spicy food this one is for you all. Thecha is a very spicy dish, which is prepared in mortar and pestle (khal batta/sil batta). If you do not have mortar at home, use grinder but grind only for 4-5 seconds.

Try this chutney with Jhatpat ratlami sev paratha (sev stuffed paratha) , Paneer Paratha (Cottage cheese stuffed paratha) , Gobhi Da Paratha/Gobhi Paratha (Cauliflower Chapati) , Sweet n Spicy Tomato Chutney (Tamatar chutney)  .

Yield: 100 gms

Duration: 5 mins (prep time) + 10 mins (cook time) = 15 mins (total time)

Ingredients for Mirchi Thecha

Green chillies12-15 (medium to large size)
Garlic 2 pod
Coriander leaves2 tbsp (chopped)
Saltas per taste
Cumin seeds1 tsp
Oil1 tbsp

Procedure for Mirchi Thecha

  • Wash and chop green chillies in two parts, garlic and coriander.

  • Heat oil in a deep pan, add cumin seeds and let them crackle.

  • Add green chilli and garlic in the pan. Cook it for few minutes, stop cooking just before green chillies start changing color.

  • Add chopped coriander and salt, mix everything well. Stop cooking.

  • Cover for few minutes.
  • Transfer the mix in a mortar. Ground everything coarsely.

Note:

  • Thecha is a very spicy chutney, if you want it to be comparatively less spicy than use medium spicy green chillies.

 

Sweet n Spicy Tomato Chutney (Tamatar chutney)

Hi everyone ! Today’s recipe is ‘Sweet n Spicy Tomato Chutney’. It is a tangy, spicy and sweet tomato chutney. You can ¬†have this chutney with stuffed paratha, dal rice or when you in hurry you have it in sandwich also. I love this chutney very much as I love having tomato daily. ūüėÄ All my tomato lover friends this one is for you. You can keep this chutney in fridge and can have it for next two days.

Ingredients for Sweet n Spicy Tomato Chutney

Tomatoes (cut length-wise)3 large size
Mustard seeds1 tsp
Ginger (julienne or grated)1 tsp
Oil2 tsp
Green chillies (chopped)2 large size
Asafoetida /Hing a pinch
Curry leaves8-10
Sugar2 tbsp
Black salt 1/2 tsp
Red chilli powder1 tsp or as per taste
Turmeric1/4 tsp

Procedure for Sweet n Spicy Tomato Chutney

  • Wash and cut tomatoes lengthwise.dsc02495
  • In a deep pan heat oil. Add mustard seeds, green chillies, ginger julienne, curry leaves and asafoetida. ¬†Saute for few seconds.

  • Now add tomato and saute more.

  • Add red chillies, black salt and turmeric, mix well.

  • Cover the pan and cook till tomatoes are cooked completely.
  • When tomatoes are almost done, add sugar.

Instant Masala Rava Idli (with coconut chutney)

Hello everyone ! Today’s recipe is ‘Instant Rava Idli’. This recipe is easy and quick to enjoy idli. Authentic south indian idli needs time as it needs fermented batter. It is a popular breakfast dish. Idli is a very healthy dish as it is cooked through steaming process. In this recipe wheat rava (semolina) is used instead of rice rava.

To cook instant rava idli, you will need semolina/rava/sooji as your main ingredient. Idli is often served with sambhar or chutney. Rava idli is a speciality of Karnataka. Instead of using a steamer, I used microwave for preparing instant idli.

Ingredients for Instant Masala Rava Idli

For Idli

Semolina/Suji                                           1/2 kg

Buttermilk                                                 1/2 ltr

Fruit salt                                                     1 pouch

Onion  (chopped)                                   1 small size

Green chilli                                                1 small

Tempering 1 for idli:

Oil                                                                   2 tsp

Urad dal                                                      1/2 tsp

Red chilli powder                                  1/2 tsp

Turmeric                                                     1/4 tsp

Salt                                                                 1/2 tsp

Jeera/Cumin seeds                               1/2 tsp

Mustard seeds                                         1/2 tsp

Hing                                                               a pinch

Tempering 2 for idli:

Oil                                                                  1 tbsp

Salt                                                                1/2 tsp

Red chilli powder                                  1 tsp

Turmeric                                                    1/4 tsp

Curry leaves                                             8-10 nos.

Jeera/Cumin seeds                              1/2 tsp

Mustard seeds                                        1/2 tsp

For Coconut Chutney

Fresh Coconut                                        1 small size

Roasted chana                                        1/2 cup

Tamarind                                                    10 gms

Jeera/Cumin seeds                              1/2 tsp

Ginger                                                         2 inch

Salt                                                               1 tsp as per taste

Green chilli                                              6

Garlic                                                          7-8 cloves

For tempering:

Oil                                                                 1 tbsp

Urad dal                                                    1/2 tsp

Red chili                                                    1  no.

Mustard seeds                                      1/2 tsp

Curry leaves                                           7-8 nos.

Procedure for Instant Masala Rava Idli

For masala idli:
  • Mix semolina and butter milk in a bowl. Keep it aside for at least 10 minutes.
  • Add chopped onion and green chilli in the mix.
  • For tempering 1: Heat oil in a small deep pan. Add jeera and mustard seeds, let them crackle. Add all the remaining ingredients of tempering 1 in the oil. Temper the above idli mix. Mix well.

  • At this stage, add fruit salt and mix everything uniformly.

  • Now grease moulds of idli trays well. Pour idli batter in the mould. (My idli mould is for mini idlis that’s why it took only 6 minutes to steam idli in the microwave.)

  • Tempering 2: Heat oil in a deep pan. Add jeera and mustard seeds, let them crackle. Add all the remaining ingredients of tempering, immediately add idlis in the tempering.

  • Cook till tempering coats all the idlis uniformly and are crispy.
  • Your Instant masala rava idli is ready to serve !
  • Serve it with coconut chutney.

For coconut chutney:

  • Grind all the ingredients of chutney in a grinder in a smooth paste.

  • For tempering: Heat oil in a pan. Add all the ingredients of tempering and cook for a minute.
  • Temper coconut chutney and serve it with masala idli.

Note:

  • If the idli batter looks very thick in consistency then add little amount of water.
  • You can also add dry fruits in the idli.

 

Chili garlic chutney (Sabut Lal mirch aur lahsun chutney)

Hello everyone ! Hope you all had a great week. Today’s recipe is ‘Chili garlic chutney’.¬† This chutney is sweet and spicy in taste. It is for all those who love this flavour. This chutney is made from fresh garlic and whole dry red chilli.¬† You need only 5 mins to prepare this recipe.

Ingredients for Chili Garlic Chutney

Garlic cloves (Lahsun) (chopped)                                              15-20

Dry red chilies                                                                                      6-7

Saboot dhania (Coriander seeds)                                             1 tsp

Jeera (cumin seeds)                                                                          1 tsp

Salt                                                                                                              to taste

Sugar                                                                                                         1 tsp

Lemon juice                                                                                           1-2 tbsp

Oil                                                                                                                2 tbsp

Procedure for Chili Garlic Chutney

  • Soak red chillies in hot water for about 30 minutes.

  • After 30 mins, grind chopped garlic cloves, soaked red chillies, lemon juice, sugar, jeera, saboot dhania and salt. Add water and make a smooth paste of it. Here note that, you can also¬†use same water that you used for soaking the red chillies.

  • Heat oil and cook above paste on low heat till oil separates. If you find its consistency too thick, you can add more water and bring it to boil. Let it cook for 2-3 minutes and remove from fire.

  • Chutney is ready to serve. Enjoy this chutney as side dish with gobhi parathas/rice/snacks.

  • If you find chutney less spicy you can add red chilli powder in it.
