Chilli Garlic Sauce (Homemade)

Hello Everyone ! How are you all? Today’s recipe is ‘Chilli Garlic Sauce’. Now enjoy chilli garlic sauce at home which contains no preservatives. You can serve this sauce to your family with no tension of artificial colour or preservative. In this recipe, we are using vinegar and salt which act as natural preservative.  Store this sauce in a glass jar and keep it in refrigerator.

Ingredients for Chilli Garlic Sauce

Red chillies (dry and whole)                          1 cup

Sugar                                                                           3-4 tbsp

Vinegar                                                                      1/2 cup

Salt                                                                               1/2 tsp

Oil                                                                                 2 tbsp

Garlic (crushed)                                                    1½ tbsp

Water                                                                          2 cup

Ketchup                                                                     1 cup

Procedure for Chilli Garlic Sauce

  • Soak red chillies in water for about 4-5 hrs.

  • Discard water and make a smooth paste of red chillies by adding 1/2 cup water in it.

  • In a deep pan add red chillies paste and water, cook for few minutes.

  • Add sugar, salt, ketchup and vinegar in it. Cook till the mix acquires sauce like consistency.

  • Now, in a separate pan heat oil, add crushed garlic in it and cook till it turns golden brown.

  • Temper sauce with garlic infused oil and cook for 2-3 minutes.
  • Your sauce is ready ! Let it cool and store in a glass jar.

Note:
For making this sauce less hot in taste, you can remove seeds of chillies. In this recipe I have used red chillies with seeds.

Aloo Vada (Potato dumpling/ Batata vada)

Happy Monday everyone! ♥ I hope you all had a beautiful week. Today’s recipe is ‘Aloo Vada ‘. It is a very popular vegetarian Indian fast food. In Rajasthan it is called as aloo vada, but it is also popular with its other name batata wada.  It is basically mashed potatoes fritters/dumplings, which is covered in gram flour batter. In this recipe there is no need to temper the mashed potatoes. Try this hearty snack at home and enjoy with your family as tea time snack/appetizer. It can be served with green chutney (mint and coriander chutney) or ketchup.

Ingredients for Aloo vada

Potatoes (boiled )               1 kg

Lemon                                       1½ no.

Salt                                              1½ tsp

Coriander leaves                 1 cup

(chopped)

Mint/Pudina                          2 tsp

(chopped)

Curry leaves                           8-10

(chopped)

Ginger                                        1½ tsp

(finely chopped)

Chaat masala                         2 tsp

Chilli flakes                             2 tsp

Oil for deep-frying

For batter:

Gram flour/Besan                2-2½ cups heaped

Salt                                                1 tsp

Red chilli powder                  1 tsp

Cumin/ Jeera                          1/4 tsp

Soda bi-carb                             a pinch

Carrom seeds/Ajwain        1/4 tsp

Water                                         as  required for batter

Procedure for Aloo vada

  • Peel and cut potatoes in half. In a pressure cooker boil potato cubes with salt.

  • Mash potato cubes and add all the masala ingredients (except oil) in the mashed potatoes . Mix everything properly.

  • Divide potato masala in equal size round balls. Keep them aside.

  • In a deep bowl take gram flour, add all the ingredients of batter in it.

  • Add water in it to have a batter of medium consistency.
  • Heat sufficient quantity of oil in a deep pan for deep-frying.
  • Dip potato balls in batter and deep fry them till golden brown.
  • Serve them hot with ketchup or chutney and deep fried green chillies.

Macaroni Chaat (Pasta/macaroni in yogurt)

Happy Friday everyone ! Today’s dish is ‘Macaroni Chaat’. This is my mom’s special recipe, which she prepares for us every year in Ramadan for iftar. You can enjoy this soothing dish as snack/appetizer during summer. It is a different recipe of macaroni with exciting mix of taste. Let’s get started with the recipe….

Ingredients for Macaroni Chaat

Macaroni                                                          250gms

Boiled potatoes (small cubes)              2 nos. (medium size)

Yogurt                                                                750 gms

Green chillies                                                 4-5

Salt                                                                       to taste

Red chillies                                                      1/2-1 tsp

Green chutney                                              2 tbsp

(mint coriander chutney)

Tamarind chutney                                       2 tbsp

Boondi                                                               1 cup

Nylon Sev/bhujia/sev                                1 cup

Papdi (fried flour crispies)                      7-8 (small pieces)

Chaat Masala                                                 1/4 tsp

Coriander leaves (chopped)                  2 tsp

Black salt                                                          1/4 tsp

Cumin powder (roasted)                         1/2 tsp

Mint leaves (chopped)                              1 tsp

Procedure for Macaroni Chaat

  • Boil macaroni following directions written on the packet.
  • If you are using salted water to boil your macaroni then adjust salt quantity accordingly for chaat.
  • Now drain warm water and wash with cold water. Mix 1 tsp oil and keep it aside.
  • In a large bowl add yogurt and mix boiled potatoes, green chillies, chopped coriander leaves, mint leaves, salt, red chilli powder, chat masala, cumin powder and black salt. Mix well.

  • Now add macaroni in the above mix. Let it chill in fridge if you are not serving it immediately.

  • In the end, just before serving garnish chaat with sev, boondi, papdi, green chutney and tamarind chutney. While serving it, mix everything well.

  • Onion is optional in this recipe, for additional crunch you are free to use it.

Ingredients for Creamy Fruit Salad

Mango (chopped)         1

Pomegranate                  1

Banana                               3

Sweet lime                        1

Full cream (small           1

size tetra pack)

Sugar (optional)             2-3 tbsp (as per your taste)

Procedure for Creamy Fruit Salad

  • Wash, peel and chop mango and sweet lime in small pieces.
  • Wash and remove pomegranate seeds and mix it with other fruits.

  • When sugar completely dissolve, add fruits in bowl.  At this time cut bananas and add to the bowl.

  • This salad can be made with mix of any fruits of your choice like apple, grapes, pineapple, berries or kiwis.
  • For crunch you can add dry fruit in this salad.
  • In case you want to skip sugar you can add your favourite sugar form.

Falafel (Chickpeas patty)

Happy Monday everyone! Today’s recipe is ‘Falafel’. This recipe is so popular everywhere now that, it really needs no introduction.  For those who are still not aware of this dish, falafel is a middle eastern dish which is served with pita bread which acts as a wrap or pocket.  It can be served as an appetizer, with tahini-based sauce or any spicy sauce of your choice . You can have this dish for iftar with or without pita bread.

Falafel was so popular at one time that McDonald used to serve McFalafel in some countries. Falafel is a very popular vegan and vegetarian street food. Main ingredients for this dish is chickpeas or fava beans. Egyptian version of this dish uses fava beans. We are going to use cooked chickpeas for our recipe, let’s get started…

Ingredients for falafel

Chickpeas/chole (cooked)            2 cups

Coriander leaves (chopped)        1/2 cup

Garlic                                                        2 -4 cloves (large)

Green chillies                                       3-4 nos.

Maida/ All purpose flour               3 tbsp

Coriander powder                            1 tsp

Oil                                                               for frying

Ground cumin                                     1 tsp

Onion (chopped)                                1 no.

Ground black pepper                      1 tsp

Salt                                                              to taste

Olive oil/vegetable oil                     3 tbsp

Procedure/method for falafel

  • Soak chickpeas for at least 8 hours. Pressure cook till tender.
  • Now in food processor, grind the chickpeas with all the other ingredients in a coarse paste, by keep adding oil at regular intervals. Do not use water to grind all the ingredients.

  • Make small rounds of equal size with the mixture. Flatten all the chickpeas mixture balls in patty shape in between your palms.

  • Heat oil in a frying pan/kadhai/wok.
  • Deep fry the patties on high flame until golden brown. Do not flip patties as they are very soft and may split.
  • Transfer falafel on a paper napkin lined plate.
  • Serve hot and enjoy Falafel !

Note:
  • You can make this dish with uncooked chickpeas also, in that case do not add maida (all-purpose flour) in the above recipe.
  • If you have parsley at home you can add that too, reduce coriander leaves quantity to half and add equal quantity of parsley.

Easy Cheesy Garlic Bread (with mayo chilli dip)

Hello foodies ! Today’s recipe is ‘Easy Cheesy Garlic Bread’. This is easy and quick recipe to make during iftar/iftari this Ramadan. It is easy dish to have as an accompaniment with pizza or pasta. You only need less than 15 minutes to prepare this dish. I love garlic bread with cheese as I am a big fan of garlic flavour and cheese both. You can have this as your tea time snack as well. Let’s get started with the recipe.

Duration: 15 minutes (for garlic bread + dip)

Ingredients for Easy Cheesy Garlic Bread (with mayo chilli dip)

For garlic bread

French baguette bread loaf (medium size) 1 no.

Cheese (mozzarella) 1 cup

Butter 4 tbsp

Garlic (crushed/mashed) 4 cloves

Oil 1 tsp (only if you are melting butter in a saucepan)

to sprinkle on each bread slice a pinch each of below listed dry herbs and masala

Oregano (dried)

Chilli flakes

Black pepper crushed

For mayo chilli dip:

Mayonnaise 2 tbsp

Ketchup 1 tsp

Red chilli sauce 1 tsp

Chilli flakes 1/2 tsp

Black pepper (crushed) 1/4 tsp

Procedure for Easy Cheesy Garlic Bread (with mayo chilli dip)

For cheesy garlic bread:

  • Cut bread loaf in equal slices. Keep it aside.

  • In a microwave safe bowl or a saucepan add butter and garlic. If you are using microwave cook for 1-2 mins and for saucepan cook butter and garlic with oil for 3-4 mins. In this step we just want butter to melt and have a perfect blend of butter and garlic.

  • Apply butter and garlic mix generously on top of each bread slice. In the meantime,pre-heat oven on 200 degrees C for 5 mins.

  • Next step is giving cheesy touch to the dish, sprinkle each slice with grated mozzarella cheese. Sprinkle one pinch each of chilli flakes, black pepper and oregano on each slice.

  • Bake the bread slices for 6 minutes at 220 degrees C. Bake it till cheese starts bubbling.
  • Easy cheesy garlic bread is ready to serve !

For dip:

Mix all the ingredients of dip together uniformly. You can enjoy this dip with other snacks of your choice.

If you are using unsalted butter, do not forget to add salt in this recipe.
